I have a really long MP3 of a conference (voice quality) and I want to slice out highlights of it and save them as mp3s.
what software will allow me to do this?

Um... QuickTime Pro?
Slice and dice then "Save As". If it doesn't allow saving as mp3, save as AIFF and then use an encoder to convert to mp3...
