Is there a software solution that allows you to mirror a drive with two partitions onto another drive with two partitions. Each partition should mirror onto the second drive's same size partition.

SoftRAID?

Note, you can't currently boot off a SoftRAID mirror.

Yes, that's the only one I've heard of so far, and the fact that it's not bootable makes it close to useless.

Yes, it can. But the GUI of Disk Utility cannot set up software RAID on a boot drive -- you need to boot from CD and create a mirror, and then install the OS if you want to boot off a mirror.

Note you can use the command line to do it though -- diskutil enableRAID followed by diskutil repairMirror. I'd be 100% sure to have a backup BEFORE trying this, though.
