I like cheese. Do you like cheese?
What is your favourite cheese? Can you even get good quality cheese where you live?
I might be bored.

Some cheese that I like:
Proper farmhouse mature Cheddar. The kind that stinks of ammonia and takes a layer of cells off the roof of your mouth. I'm fortunate that I live only 15 miles or so from Cheddar the actual place. Not that much cheese is actually still produced there any more;
Stilton. There is a specialist cheese shop near me that makes the creamiest Stilton I ever found. Most shops keep it too cool, vacuum packed in small wedges. Keeping it in whole truckles in a cellar where it can breathe a little makes a worthwhile difference I can tell you. Stilton goes really well with walnuts, especially if you sprinkle both on something and then bake that something. Mushrooms are a good something for this;
Halloumi. Saltier the better. One of my favourite sandwiches is Halloumi, roasted portobello mushrooms, Basil pesto and fresh Rocket on a wholewheat organic baguette. In the summer I like to switch it up to Halloumi, roasted yellow peppers and Chilli jam with fresh Rocket on a white baguette The Halloumi is grilled for both versions;
Parmesan. I bought a nice big block off decent Parmesan from Costco of all places. Great on any pasta dish;
Gouda. A nice old one. Darker orange in colour and a little dry. A nice alternative nibble;
I could go on and on. Emmental, Jarlsberg, Gruyere, Brie de Meaux or a Vacherin. Tallagio doesn't smell great but its tasty. I love to stab a few cloves of garlic into a Camembert, sprinkle salt and black pepper on top and then bake it. Dip some roasted chestnut mushrooms in it;

I dislike the pre-cut slices because they're poorly designed and prone to bending.

I do like cheese, and can get good cheese where I live.
We half overlap, and half probably think we're out of each other's minds.
Moldy cheese? **** that. Bleu Cheese and Stilton are out.
I'm a big fan of hard cheese, so I'm right with you on old Gouda. Good Parmesan is not only for pasta. Eat that shit on its own!
I like Brie if it isn't too stinky (see Bleu and Stilton). Brie de Meaux is usually right over the line. Cheddar is pretty ****ing bland here in the states. As a comedian once said, "Cheddar is for people who like the idea of cheese".
I like what goes in a quesadilla, when it's in a quesadilla. Is that usually Chihuahua?
Fresh buffalo Mozzarella is excellent.

Oaxaca, or queso blanco, is what typically goes on a traditional quesadilla.
A good Monterey jack or pepper jack is my favorite. Pepper jack omelettes, mmmm.

I used to get some half decent Monterey Jack over here but then it suddenly went bland so I stopped buying it.
Blue cheese is awesome. You should endeavour to learn to like it.
A decent Manchego definitely has its place too.
There is an excellent local goats cheese here called Capricorn.
About the only cheeses I don't get on so well with are the really smelly German ones.
One of the strangest cheeses you'll ever try is Gjetost.

I second Manchego, but goat milk Manchego, not sheep.
Also, the obvious-but-appropriately-regarded Grana Padano can be found online relatively cheaply. I can't find it in a single store in my area of about 450,000 residents, so online is my only hope.

LOVE cheese, and luckily I live in a country that loves to produce good cheeses. There is the supermarket shite, but the unpasteurised heart-attack inducing stuff is widely available.
The Froggies can also make decent bread and wine, which helps.

Speaking of heart attacks, I love cheese and a local supermarket carries a very nice variety of artisan Quebec cheeses in particular, which I highly recommend in this thread and which I was able to gorge on for years, to the point where my doctor strongly recommends I do not eat any cheeses at all nowadays. So it seems those days are over. Bummer.
