Assuming you have a compatible version of the Snow Leopard installer, put the DVD in the drive, shut down the iMac and reboot holding the Alt key. Choose the SL Install Disc to boot from, then run through the installer until it lets you pick the external disk as the install source.

The mid 2011 iMacs shipped with 10.6.6 so you might need your SL install to be that version or later. I don't believe you could get such an installer disc except with one of those iMacs.
I have plenty of more important things to do, if only I could bring myself to do them....

I have Snow Leopard on an external drive and it works as intended. I also have SL on an internal volume and it too works normally. In both cases, it was just of matter of using SuperDuper to first clone my data to the designated volumes. Of course, the target drive/volume must be properly formatted.

The current iMacs will run Snow Leopard, what version are you trying to clone to it?

You have to update it to 10.6.8 first for it to work.
