This is called "conspicuous consumption" by economists. People seem to think "if it costs more, it must be better". It's a logical fallacy.
The gist of the Quark vs. Indesign debate is:
Guy1: Indesign is better
Guy2: No, Quark is better
Guy1: No, Indesign is better
Guy2: Well, all my files are in Quark and some service bureaus still require Quark
Guy1: Well, Indesign imports Quark files, and all the service bureaus I know of take Indesign now too
Guy2: Well we've always used Quark, so we will stick with it
Guy1: Well, we made the switch and are much more productive with Indesign
Guy2: Well

Guy1: Well
you too!
The bottom line I think is this. If you care, get the one you care about. If not, get whichever one is cheaper. Both work well enough for most people.
