As far as I understand, it's not from you at all! If I wanted to, *I* could send you an email, and have it say its from you. It can still use their mail server, but just put your email address in the header.
Mail then sees your email address in the header, and replaces it with your name, since it knows that address belongs to you.
Don't stress, I get mail from my name and email address all the time. They just duplicate the to and from fields to make you pay attention. Stress less dude.

Well - if you think that you sent it, you will actually read the whole thing to see who you sent it to, and why it came back.
Thus, they have made you read their spam. It's all about making sure people don't ignore them.

Forging the headers for the email to make it look like it's coming from you isn't the worst of it. They can also forge the rest of the header, which makes it a bit tricky to find out where the email actually did come from. But if you go View->Message->Long Headers in Mail, you should be able to determine where the email was sent from. When I get frustrated by spam, I sometimes try and figure it out, then forward the message to [email protected]. I've had a few positive responses.
I believe this newfangled IPv6 is going to make it tricky (or impossible?) to forge email headers.
