Changing Menu Text colors

I'm new to theming, and I'm interested in changing the color of the text in the menu bar (specifically in the finder). When people have created a black menu, there are a few who didn't change the clock's color, so I can't see the time. How do I do this? I'm sure it is quite simple, I just don't know how to yet.

ThemePark > your theme > Elements > Global Elements > Text Colors > Menu Item Text

If you are simply concerned with the clock being visible check out "iClock" Application. This app is fantastic in that you can manipulate the fonts, the color, the time/date appearance and more. You can probably find it at macupdate.com and/or versiontracker.com If you want to manipulate the font color of the entire menubar the above Macsters advice is good. However, I would be cautious when changing such elements. If you use ShapeShifter, many if the GUI kits that you can choose to apply using SS come with their own text elements that change as the theme changes.
