will Mountain Lion be a standalone .dmg with a package inside?
or do i have to re-learn the whole 'InstallESD' extraction process?

It will be distributed exclusively via the App Store.
It would make sense to maintain the App Store installation process.
Context-click on the downloaded installer, go to SharedSupport, and copy the InstallESD.dmg in there.

I prefer to wait about 4-12 hours after the OSX release for the Mac experts online to write an article about how to extract the DMG form the downloaded file and burn a DVD or USB.
