I have a MacBook (3,1) running 10.5.2; which I use as my primary machine between home and work.
At work I have an external monitor and Apple bluetooth keyboard and mouse which are paired with the MacBook.

I want to get the same setup for my house but I was wondering if the MacBook would have any issues with having two keyboards and two mice paired via bluetooth.
When I get home I'd connect the monitor and wake up the MacBook via bluetooth, just like I do at the office.

Does anyone have this sort of setup, or know if it'll work? (I'd prefer not to have the wired keyboard and mouse)

I wouldn't see any issue with this. It's the same as having your mobile phone paired to two computers. As long as you don't try and use both keyboards and mice at once you should be fine, I'd imagine.
