Just as the title states (and yes, I did check search before I posted) - is it possible to run a video game system off the Macbook? Use it as the monitor? Do I need one of the $300 adapters? Not possible at all?

You did not look hard enough. This has been asked to death - not specifically for Macbook, but computers in general (without direct 2 screen blitters).

Convinced?

Sorry to say but the answer is no (kinda) - You can use a $300 DV bridge (or youse your DV camera if you alerady own one) but the problem will be latency. If you play "fast twitch" games then it's not going to work, but if you primarily play RPG's or other games where latency is not much of an issue than you are fine.

And some other ElGato products too.

Sometimes a search turns up old info, while asking turns up new info
