It says in the release notes:

On iPadOS, use Numbers in multiple spaces or edit two spreadsheets side by side in Split View

But when I try to open a second spreadsheet while another is already open, it just refreshes the one that is already open instead of opening a second spreadsheet to the side.

How do I get this to work?

Sure.

So is there a sequence in split view that I'm overlooking, to get two numbers spreadsheets side by side?

I don't know. I've never used split view on my iPad...
