We've got 5 new iMacs here and one in particular does this all the time. I recall seeing the other 4 do it shortly after I set them up, but I can't remember seeing them do it since.
What is indexing anyway? And why does this one in particular do it all the time? You don't have to be idle for very long before it will start. You can just be reading a web page and it will pop up.

Indexing is a feature of Sherlock. To turn it off, fire up Sherlock and check the pull-down menus. Indexing enables hard drive searches using Sherlock.

This is a feature of Sherlock - it enables you to find any item in your HD with
just a word or two as your search criteria.
Open Sherlock - go to the Find menu - select Index Files - in the window that opens click on Schedule -
remove the checkmarks from all the boxes - now select days/times you wish indexing to take place when
it's convenient to your operations.
You can also just leave it all unchecked, but then you'll have to remember to inaugurate scheduling
manually if you want to use this feature.

Oh, you can do it from the Sherlock menu huh? I just turned off the Indexing Scheduler Extension. Guess this other way would be better.

It's sending all your personal information, email, and documents to Microsoft (they made Apple do it).
Actually ,what others haven't really pointed out, is that it lets you search *the contents* of documents, email, etc... not just the file names. I've never found a use for it, personally, I can keep track of what I name my files...
