If anybody knows, I would appreciate it. I tried the copy and paste method but when I went to paste it onto the iTools icon "paste" was greyed out. Thanks...

Do you mean the iDisk icon that shows when the disk mounts on the desktop?
If so, you can't change that. You can make an alias to it and change the alias icon, but thats it.
If thats not what you mean... what is it?
If you are trying to change the icon the iTunes application itself and it won't let you it may be because you have file sharing turned on. With file sharing active you cannot rename files or folders in a shared directory.
