Has anyone tested out such a stupid idea yet? Sure it's XLR but it sounds like the little setup should work. Not sure what to buy otherwise.

What do you mean by "the little setup should work" ?
Is it theoretically possible to create a hardware XLR female to iPod connector dongle ? Sure.
Is there a market ? Dunno.

I just thought some type of external handheld mike to hold up to people on the seen and record audio to instead of holding the iphone up to the person.

I have high hopes for Dock-connector adapters.
Of course there's a market - journalists alone kept the minidisk market alive here in Europe for *years* after it was a dead format.
