I think it'll go to 800 x 600. But in any case, you can just zoom the display into the game so it seems to run full screen.

In System Preferences -> Display you can set the resolution to whatever you want. 1280*720 is one nice option, as the pixel boundaries match up.

The new Mac Pro has up to 30 MB of cache inside the processor itself. That's more than the HD in my first Mac. Somehow I'm still running out of space.

I wish 10.7 had resolution independence. The pixel density of my iMac 27" is almost as high as my 13" MacBook Pro. Too high for a desktop IMO.
1280x720 is too low for a 27" screen and desktop screens in general, for general usage, although fine for most games.

What modern game doesn't allow you to change the screen resolution?

Too high? Would you prefer 1080p rez? I certainly don't have Eagle eyes, but even w/o vision correction for my nearsighted 32yr old eyes, the IPS screen is still crisp enough to handle 1440p resolution.
Last year I had a Sony VAIO-Z with a 13.1" screen featuring 1080p. Yes, 1920x1080 on a 13.1" screen. That was about the limit for my comfort level and I certainly found myself having to lean in much closer than before to see everything.
