Anyone know how to get the T610 to sort by last name? I tried to cheat by entering all my contacts with lastname, firstname, but Address Book doesn't like that very much as far as working with email addresses and such

Couldn't figure it out either...

Also I can't search on the company field, that's retarded.

I had the exact opposite problem on my Siemens S55, I couldn't get it to sort by first name. The solution?
I wrote a simple apple script that swapped first and last name in the Address Book app. I run the script before syncing my phone and when it's done syncing I run the script again to set things straight.
I could post it when I get home if you want.

On the T610, go to Menu -> Phonebook -> Options -> Synchronize View. You can select to sort by first name or last name.

OK, here's the script (back up your stuff first and don't blame me if thngs become screwy):

tell application "Address Book"
set n to the count of people
repeat with index from 1 to n
set theperson to person index
if first name of theperson exists then
set A to first name of theperson
else
set A to ""
end if

if last name of theperson exists then
set B to last name of theperson
else
set B to ""
end if
set first name of theperson to B
set last name of theperson to A
end repeat
end tell

quit application "Address Book"

Run this before and after syncing and you should get desired results.
