DHCP=Dynamic Host Configuration Protocol. DHCP basically works by having a client (computer) request an automatic IP address that is supplied by a server (a router, AirPort base, etc.). In addition, other information like default gateway, DNS server addresses etc. are passed. This makes things easier for the user, who doesn't have to worry about setting a fixed IP address (and all the other data), and is often used to simplify the whole network configuration.

Also, some networks have more users than their subnet can handle at one time, but they're not all online at the same time-fixed addresses won't work in this situation, but automatic addresses, which are assigned only to the computers that are in use.

What it has to do with AirPort? An AirPort base station has a built in DHCP server (which you can disable if you need to), and AirPort cards, like any other network adapter, are capable of requesting and accepting an automatically generated IP address.

Did that help?

Basically, DHCP allows you to turn on your computer and be on a network without having to worry about configuring it.
