I currently have a Sony Ericsson 580i with a data plan through AT&T and sometimes use it to tether to my MacBook. I am thinking about getting the iPhone 3G, but I would like to use my Ericsson to tether occasionally. If I take the SIM out of the iPhone will it work in the Ericsson or is the SIM outside the norm?

It's a normal SIM card. I moved from a SE to an iPhone and they just added the data service and swapped the card.

What if you take the SIM from an old iphone and put it in a 3G one? Will they automatically start charging you the additional $10/month?
