File type/app associations?

How do I change the associations between file types (both OS X and Classic) and applications? Particularly, I'm thinking of three situations:

1) For some reason that I don't understand, all .html files open in AOL Instant Messenger. Properly, they would open in my default browser (in this case OmniWeb).
2) Since I installed Acrobat 5, it, and not Preview, should handle .pdf files.
3) Former SimpleText files (ReadMes, for example) should automatically open in TextEdit. Currently, I have to drag them onto TextEdit's icon. Clicking on them either does nothing (bad) or opens them in Classic (worse).

This probably belongs in Usage & Support, but...

We're all in the same boat. Apple, for whatever reason, hasn't properly implemented this functionality. There's a GUI for it via Inspector, under the "Applications" menu item, but it doesn't do anything.

Incredibly annoying. Complain to Apple.
