After holding out for the past two months, I was rather disappointed this past Wednesday with the expensive update that apple provided for the mac pro line. It is obviously way out of my range to upgrade to the 8 core, and I kind of wish I would have just ordered the 4 core 2 months ago.
My question is..
Whats the best graphics card available for the mac pro…

I’m assuming I should just go with basic ram and order over the internet?

The most affordable best video card is the X1900XT. The more expensive option is the Geforce FX 4500 Quadro, which is more of a graphics workstation card for those costly pro apps.

The X1900XT is very nice for gaming. I'm also shopping for a new video card but will be waiting until the new DX10 cards come out (although OS X can't support DX10, I play a little in Windows and figure may as well get the fancy new generation as they are much better [on paper]).

They make PCI Express video cards for PC's right? Then you could probably get a kick-ass card for cheap and just play your games in Windows even if there are no Mac OSX drivers for the card.

Get the X1900XT from Apple's online Store. As the others said, it's great for gaming.
