How can I instal Ubuntu on an iMac G3 233Mhz / 128 RAM ?

If the hardware is supported, just like you would any other install of Ubuntu. AFAIK, the Ubuntu community has ceased PowerPC Ubuntu work though, so you won't be able to run the latest versions.
I'd look into running Yellow Dog Linux instead.

Ok.. I downloaded Ubuntu PPC Version and burned it onto a CD. How do I make the old iMac boot from the CD? Also, how could I uninstal Mac OS 9 from the iMac?

If you burned the CD correctly, it should be able to be booted by holding c when the computer is booting
|

To install ubuntu on an iMac you have to edit the xorg.conf file to match the iMacs display refresh rates as well
you have to change the vert refresh and the horizontal refresh to 50-117 in both..
just drop to a console and then type sudo pico xorg.conf
just go thru the file and fine the line vert refresh and horizontal refresh
