I am thinking of buying a Powerbook soon but I really don't like the acceleration of the trackpad. With my Mac mini I just used USB Overdrive to kill the acceleration, but that software doesn't mention trackpads.

Yes, SideTrack. It has options for mapping button and scrolling actions, as well as control over acceleration.
