Need a hot, sweet dressing for bacon salad

I absolutely love bacon. I like spinach salad too, but there isn't enough bacon. I'm experimenting with a reverse spinach salad, with the amount of bacon and spinach switched. Anyone know a good warm, sweet dressing? Here's what I've got so far, any advice or ideas would be appreciated:
1Lb bacon, cooked to almost crispy chewy cut into thirds across length
small bunch baby spinach, chopped
1/2 small red onion, sliced thin
2 hard boiled eggs, chopped
bleu cheese chunks
ground black pepper
shredded cheese (optional)
hot, sweet dressing:
1 1/2 cup red wine or balsamic vinegar
2 TBSP sugar
1/3 cup bacon oil with little bacon crumbs from cooking
1/3 cup olive oil
1 clove garlic, crushed and chopped
1 TBSP brown mustard
ground black pepper
1 chopped jalapeno (optional)
1) In a small saucepan, warm garlic in bacon and olive oil to allow its flavor to diffuse into oil.
2) Add vinegar, sugar, jalapeno, brown mustard, and black pepper
3) Whisking constantly, bring almost to a boil. Remove from heat and cool until just warm.
4) Mix warm dressing and pour over salad. Serve immediately.

LOL, it's not THAT unhealthy. I eat regular spinach salad 3 or 4 times a week and workout as much as possible. Even with a broken foot, I've still been walking several miles, doing 75 pushups, and as many crunches as I can before I get bored every day. So a little excess isn't all that bad.
You know you wanna try it. I'll post a pic after I make it later tonight.

Thinly sliced, deep fried onion rings makes a great topping for any salad.

No! No! Food doesn't come in cans. That's some kind of fake stuff. Use a yellow or Bermuda onion. Slice thin, deep fry at 375 till golden brown and deliciously sweet.

I like bacons and salads....seperately. I'm not too found of having cheese and bacon in my salads. I prefer my salads with fruit n veg w/ a vinegrette or italian dressing.
I love my roasts with bacon though. Cheese w/ pastas n european cuisine.
Bacon on salad, i think just defeats the purpose (nutrition, taste,etc) of a salad. To each his own though.
