Just wondering if there's any easy way (as there was under OS 9) to see exactly how much memory is being used at any one time on your mac. Thanks.

Yes.
Go into terminal and type TOP
You will get a line that looks like:
PhysMem: 67.4M wired, 120M active, 239M inactive, 427M used, 213M free
Keep in mind 'Free Memory' can be deceptive. As long as the number of pageouts are low, you shouldn't care about free memory.

You can use Process Viewer (replaced with the much nicer Activity Viewer in Panther), or you can open the terminal and type "top."
While in top, there should be a line near the top that says "PhysMem." There will be figures for wired, active, inactive, used and free. Those last two, used and free, are the ones you want to look at. They're fairly self-explanatory.
Also, I believe you can see how much RAM is being used on a per-application basis by looking at the "RSIZE" column.

If you're using top, please remember that the inactive column is effectively, (if you're in any way comparing to OS 9) free RAM.
