I have my G4 attached to my Belkin wireless (802.11b) router. Can I then plug in AirTunes to the outlet by my stereo and stream my iTunes music to it? Or will I need 802.11g?

AirPort Express uses 802.11g, but it's backwards-compatible, so an 802.11b card should work fine.

Correct, I'm wondering how well it's going to work. Can't wait to see the first reviews.
