No you can't get surround sound without some sort of usb adapter.

Noone is being too clear here...
rich82fox: No, it doesn't. You might be able to do something with the USB or Firewire ports, attach an external amp or so. Some googlinig found this one, I have no idea how good it is:

And for the record, the iMac G5 supports this directly through its built-in optical audio out. I have one and I've tried it, it works.

No. Only G5 models (iMac and PowerMac) have had any surround capability. All previous Macs had stereo (or mono, waaaay back when).

does the G5 imac come with a special cable for audio? the connector on the back that apple says is for optical doesn't look like it is actually optical...looks like a normal mini jack to me

It's a combo analog/optical miniplug like portable MiniDisc recorders have used for years.
Anywhere you get optical cables, you'll see the miniplug style, too.

A colleague said that the Airport Express (which has optical out) can be used to send Digital 5.1 via ethernet to the audio out. Is this true? I know it can be used for streams iTunes music, but I didn't think once could send 5.1 audio to it like it was a sounds card.

No, it's not true. though Apple could possibly change that with a software update. Right now, Airport Express only outputs audio from iTunes, and iTunes only supports stereo.

*sigh* - I've been wanting Apple to do this from day one...i.e. Have any 'Mac' treat the Airport Extreme speaker as it's audio out, i.e. bind it in sys prefs...
So if you are connected to the same 'network' via ethernet or wifi you will be able to connect to it (via a password which is set in the APXs config - enable it trust me ) and have your music routed there.
Let's just hope Apple does this sometime soon

Mike, you don't REALLY want to hear your email notification beep, or your IRC privmsg beep, through the wholehouse audio, do you?
APX right now allows music to be played over hi-fi and email and system error beeps to be played over the computer speakers.
And those m-audio devices? They're nice.
