My stupid iPhone game: Nesen Probe, it's rather old, annoying and pointless, but it's free.
Was free. Now it's gone. Never to be seen again.
Off to join its brother and sister apps that could not
keep up with the ever updating iOS. RIP Nesen Probe.

A lot more Dreamweaver usage than I thought! Don't see the appeal there...
Firefox
Postbox
iTerm
Textmate
Macfusion
Nessus Client
NX Client
MS Remote Desktop
LastFM
Photoshop
Flash (unfortunately)
NeoOffice
MythTV Client
VLC
Skype
MPEG Streamclip (lately)
Platypus
I also love using the Keychain Access utility, it's very handy. Other Apple apps I use frequently include iChat, iCal, Safari, X11, Console (too lazy to create a little Platypus script launcher to tail -f my system logs), iTunes, and lately iMovie.

In not particular order
Mail,
safari,
ical
itunes
iweb
numbers
pages
terminal
aperture
VMware Fusion
Bridge
PS
Transmit
ibank
rapidweaver
coda
bbedit (not so much anymore since I've been using coda)
I've been shying away from iWeb and moved most of my projects/websites to rapidweaver with some css/html coding with coda.
Here's my very unexciting dock

I'd recommend neither. Get a Git client, Git is so much nicer than Subversion and can even read and write to Subversion repositories.

Here's a suggestion for those of you who have zillions of apps in your dock:
You can consolidate many of your dock icons within folders that are in your dock. I've got folders for Disk Diagnostic apps, Internet apps, photo apps, Microsoft Office folder is just dragged to the dock, iWork folder is just dragged to the dock, Utilities folder is just dragged to the dock, my Applications folder folder is just dragged to the dock...
Each categorized folder is in my Applications folder. And I've made aliases of each application that is to be put in the categorized folders.
This way, I have ten default apps in my dock, with about 17 folders containing many easily accessible apps. The aliases are in alphabetical order, but you can have the most often used apps at the top by adding a space or numbers to bring them to the tops of the lists. This organizes things pretty well for me and I thought that I'd share my idea with you.

I'm sure there are more that I use > once a week, but those are the big ones that occur to me.
(Oh, and while it doesn't feel like an app, I interact with Quicksilver all the freakin' time)
