Where are these guys stored and how do I trash the ones I don't need or want? There are so many I can't find the ones I want quickly.

I don't know how to do it manually, but have you looked into Service Scrubber?

Services are offered by apps that are stored in either the /Applications folder or the /Users/<yourusername>/Applications folder (if you have created one).

To prevent an app offering a service, move it out of either of those two locations and put it somewhere else (I don't recall, but you might have to log out and back in again for it to take).
