Could anyone give me a quick howto on working on existing .jar files in XCode? I've never done it before, and it isn't obvious how to do it. I appreciate any help, or a point in the right direction.

What are you trying to do with the .jar file?

My understanding (granted, this information may no longer correct or never correct ) is that .jar is a zip file containing a whole bunch of java class files. Each of those class files corresponds to an already compiled Java application/library. You won't be able to edit the code unless you want to get good at jasm (an assembly language for the Java Virtual Machine...does that still exist?)
