Illustrator AI files saved as generic PDFs ?

I am running 10.4.4 with Illustrator CS 2 and when saving
in the default '.AI' format the finder in turning them into
Preview formatted PDF format files that when double clicked
open in Preview - It's driving me mad...
Is there a fix ?

Method 1:
1. Select one in the Finder
2. Choose Get Info from the File menu
3. In the Open With tab, choose Illustrator
4. Click "Change All"
Method 2:
1. Right click on one in the Finder
2. Choose Open With...Other from the contextual menu
3. Choose Illustrator
4. Put and checkmark in Always Open With
5. Click Open

While that was my first thought too - Illustrator turns the
files into 'Previews Generic PDF' and making Illustrator the
default for opening PDFs is not my idea of a solution.
I have noticed that all Photoshop Jpegs and occasionally PSDs
are also turned into the generic Preview file format.

I agree that you don't want Illustrator the default for opening PDFs. But doing what I suggest would not accomplish that. You will only be changing the default application for "*.ai" files, not pdfs.
