Who purposely drinks sour milk? Or are we talking about buttermilk here? I don't know why that product exists, quite frankly.

There is a difference between "sour" milk and cultured milk products. Although I have never worked a day in this field, my degree is in Dairy Food Science. Most cultured or fermented products are an acquired taste. One of my college lab projects was to make a buttermilk "starter" and then make a batch of buttermilk. We had to transfer and test our starter every day, including tasting. I HATED buttermilk when we started, but after tasting it every day for weeks, I eventually acquired a taste for it. Cheese is no different. I remember as a teenager my father and uncle eating Limburger cheese on saltines with a bit of raw onion and washed down with beer. I tried it and liked it. I like most cheese to this day.
Milk + unknown bad bacteria + time = sour milk (bad)
Milk + known good bacteria + ideal conditions + time = Cultured milk products (good)

I love buttermilk, and have since childhood. Especially flavored buttermilk drinks (perennial favorite is lemon).

I don’t like buttermilk on its own, but there are four things that more than justify its existence:
  1. Soda bread (and other things baked with buttermilk)
  2. Koldskål
  3. Home-made smoothies with berries, vanilla ice cream, and buttermilk (though yoghurt or other soured dairy products can work too, here)
  4. Lassi
Edit: Technically, or perhaps rather historically, buttermilk isn’t soured. Only in fairly recent times have we started making cultured buttermilk. The traditional type is much better, if you ask me.

With that said, when regular milk starts tasting "old," I pitch it. I don't touch buttermilk except in salad dressing or cooked (great biscuits and pancakes come from buttermilk!).

There's some very substantial difference between "sour" milk and cultured milk products (or traditional buttermilk, for that matter). I can't quantify it, but when milk starts to "turn," it has a very different taste from buttermilk. And I dislike bad milk enough that I am cautious if the milk has been around for any notable length of time.

When milk goes bad I use it to make pancakes. Sounds horrid but tastes great.

It sounds bad if you use pasteurized milk. When raw milk goes bad, it's good for baking because it still has the good cultures left in it. People will have fond memories of their grandmother baking with milk that goes bad, but I don't think that works anymore. I could be wrong though.

I never had buttermilk, but have accidentally had some sour milk. Frickin disgusting. I'm not a big milk fan in general, I can't imagine why any human would want to consume another species lactation in any large quantity, I don't care how good it tastes. Ah, but give me a hunk of cheese the size of a car battery, now we're talking.

btw Dakar is right - Sour Milk would be a great name for a band.

Along similar veins, I've heard of a maggot cheese from Italy, not sure if anyone here ever had it... but when you cut the cheese (lol) there are living maggots inside.

I'm afraid to drink sour milk now after seeing Troll 2, although come to think of it, they never really explained why the goblins were giving out sour milk and whether it also turned people into trees.

I have so many questions about that movie...
