I have recently started using mac mail and was wondering how you hide your recipients details
Sorry if this sounds dumb

Do you mean hiding your list of recipients within a message through blind carbon copies (Bcc)? If so, you just need to enable the "Bcc Address Field" by selecting it from the View menu.

Message menu under View ? Not really sure what you are referring to.

To enable the Bcc header, you just need to open up a New Mail Message in Mail.app, then select View/Bcc Header from the Menu bar. That's also where you can add the Reply To header, I believe. Two handy little bits that, for whatever reason, seem to have been tucked away.
