I am thinking of buying more RAM and ungrading my notebook to 2 gb. However I can't remember where bu I've heard having too much RAM will slow down the computer... is this true? Should I go for 2 gb or stay with my current configuration?

In general, no. Putting another gig in your Macbook will help both in terms of capacity and bandwidth.

There are some situations with some computer systems and some applications where more memory could cause a slowdown (like Mac Pro + >4 slots filled + latency sensitive app), but they're a very rare.

Having 2 GB in a Macbook should not cause any slowdowns right? Thanks in advance!

Windows computers have a "sweet spot" beyond which they cannot make practical use of "too much RAM." Older PC OSs would sometimes slow down because the hardware couldn't keep the OS updated about the (unusable) extra RAM. But since XP came out, this is not a problem-it just can't make practical use of the extra.
