In preference, I like to have history set to always remember. So if I want to clear cookies I do the tedious method of pulling the dropdown to custom, then clean cookies, then I have to do dropdown again to go back. Is there an easier way?

In one line, Use Command+Comma >> Privacy >> Remove All Website Data >> Remove Now.

Usually to delete the Safari history I use Shift+Command+Delete and in case of deleting Chrome history, I use Ctrl+Shift+Delete and click on Clear History button.
