After updating my iPhone to 1.1.3, it seems that Gmail is now IMAP only. Why did they change it?

Maybe because IMAP is superior to POP in every way?

That would be bizarre if true. GMail allows POP access, but the iPhone is not allowing this specifically for GMail servers? Seems too odd.

I think that is what this article is referring to:
MacNN | Google warns of Gmail issues with iPhone 1.1.3
My understanding is if you go back to the iPhone (or from your mac/pc) and create the account by not clicking on the GMail button but other and choose POP than you can go back to POP. They just overwrote what happens if you setup GMail using that button.

Bingo. Don't know why anyone would actually want to use POP when IMAP is available.

I was really digging IMAP until I realized that, for some reason, all the spam now goes into my "All Mail" folder and mixes with all my archived mail. I had to delete 155 spam emails by picking and choosing through ALL of my archived mail this morning.
WTF? I must be missing a fundamental operation when using the iPhone to organize my gmail account. I have a filter that sends "is:spam" to the trash, but it is in two locations on my iPhone, and when deleted, they go to my "All Mail."
Not sure what is up with that.

You didn't set up your folders properly:

Thank you jokell, I hadn't run across the fix for it. All better now. Actually, I had gotten so fed up, I deleted the account on my iPhone and did the auto setup...works great.
