I need to move a user from one machine to another.

I thought this would be as simple as copying the users home folder over to the new machine, then creating a new account on the new machine (at which point it says there's already an account, do you want to use this, Yes!).

The problem is, when I now launch Mail on the new machine, I'm having to go through all the Mail setup again. For fear of losing old data I quit that process and want to investigate further before I continue, because I'd hate to lose old messages. And then also little things like the dock isn't setup properly for that person, there wallpaper isn't set, and even their user picture is gone on the new machine....

Is there a better way to move a user (short of using the Setup Assistant, which I don't think I want to use since that moves every user between machines and I only want to move one account), and to retain all the functionality?

I must be missing something, but I haven't been able to find the missing step yet, and searching hasn't opened any new doors for me either.

Use the Migration Assistant. You can select the users you want to migrate.

I totally forgot about Migration Assistant. I guess booting the new machine and seeing the Setup Assistant forced that to the front of my brain and pushed Migration Assistant to the back- oops!

Thanks, it's already up and running with the user account.
