Is there any 3rd part software that enables me to effectively video record quicktime - i.e. can I somehow capture/record streaming quicktime and watch it later?

The easiest solution is to download the demo copy of SnapzPro and "screen grab" the video as a selected area of the screen. I know this sounds like a hokey solution but it does work quite well assuming you don't want 30 FPS full motion video.
