Is there a way to tell Apple not to ask me anymore about updating to high Sierra? I'm going to wait 6 months.

System Preferences -> App Store -> Automatically check for updates (uncheck this box).

You could also do a HS install to an external, then wipe it. It appears Apple keeps track of which machines have updated. I did this with a test partition, while continuing to live in Sierra. No nag banners so far. Even though I do allow the app store to check for updates.
