Is there a way to modify what is says under Kind (the type of file it is) when viewing in list view? For example I would it to say InDesign CS Doc instead of the full InDesign CS Document or just Excel file instead of Microsoft Excel workbook. Any hacks or knowledge on what files to modify?

You'd probably have to edit the Info.plist of the application which declares the type.
