forgive my forgetfulness or ignorance, but is there a keystroke or two to
1) replace a font in highlighted text?
2)change the size of highlighted text?
comon sense tells me that they exist, but i don't know where!

I don't know of a keyboard shortcut to replace text on a universal basis, but ⌘+ and ⌘- will adjust the size of highlighted text in most apps.

Font short cuts are not standard across apps, but anything using the Cocoa rich text fields will bring up the font panel if you hit Command-T.
The new Mac Pro has up to 30 MB of cache inside the processor itself. That's more than the HD in my first Mac. Somehow I'm still running out of space.

You can add shortcuts yourself in System Preferences. You can add the same shortcut to the same function in all your apps, if you want.
