Artwork in iTunes?

I want to change the artwork for a particular item in iTunes, but it won't allow me. Both the "add" and "delete" buttons are grayed out?
Is there a way around this?

What happens when you select the track you're trying to change the artwork for, then drag the artwork to the album cover in the bottom left corner of iTunes instead of using the Artwork tab of the Get Info window?

it does not recognize the new artwork. I even try and drag the old artwork away, nothing happens. It's as though it some sort of proprietary thing?

Is this music that you have bought off of iTunes?
I have yet to buy off of iTunes so I am just wondering if there is a certain tag or marker built into the files that force it to be with that artwork.
