Anyone know of a packet sniffer/decoder that will work with X, even if I had to recompile it? That is the only thing (aside from DVD) which I need 9.1 for,,,

If you don't mind to work in the terminal, you could try tcpdump.
`man tcpdump' for more details.

I have not compiled it on MacOS X, however, there should be no reason why you couldn't use snort (http://www.snort.org). It may be more than you are looking for...
from what is snort:
Snort has three primary uses. It can be used as a straight packet sniffer like tcpdump(1), a packet logger (useful for network traffic debugging, etc), or as a full blown network intrusion detection system.
good luck

You may also want to check out dsniff.
Main info page at: http://www.monkey.org/~dugsong/dsniff/
There is a precompiled MacOS X binary floating around out there somewhere as well; can't remember where I came across it.
