I just got a new monitor, 16:10, to replace my old monitor, 4:3.

When I open some applications, particularly iTunes, the window extends beyond the bottom on my screen. I've tried using the 'radio buttons' in the upper left hand corner but still can't get to the place where I can drag the screen to the size I want.

How do I get my window size back? I seems to remember that it's pretty easy but I can't remember how right now.

so when you click the green button, what happens? Does it not expand to fill the screen?

In iTunes clicking the green button switches to the mini-player. To get it to zoom the window you have to hold down the Option key while clicking the green button.
