I want to use Screen Sharing under Leopard but I want the physical screen on the remote machine to remain completely dark (because there's someone sleeping in that room) while it remains at normal brightness inside the Screen Sharing window. Is this possible?

Turn the screen off or dim the brightness. When you do screen sharing, the remote machine is awake, just as in normal operation. There's no way that I know of to prevent the screen from waking up (if that's what you're trying to do). So simply turn off or dim the remote display.
