Well I'd like them to do like the Pre and make the SMS/MMS app also support Jabber/GTalk/AIM/Yahoo. Would be nice. They'd need to figure out a UI to let you choose what service to use, though.

They shouldn't limit themselves to just these services. This app should be Adium in the brains and iChat in the beauty.

first gen Touch. The latest OS shouldn't be clunky on hardware only 2yrs old.

Having the scroll bar you get in Remote etc applied throughout Safari, etc. The current scroll bar in Safari is all but useless - pressing and dragging on it doesn't actuall scroll, it only serves as a visual indicator of what section of the page you are currently viewing. Pressing and dragging up and down to go through a long page is much faster than swiping multiple times.

I would like to be able to search my music within the iPod. Right now you have to go out to Spotlight to do so.

You can. Like almost all other Apple developed apps, you just need to go up to the very top (not where the application loads, which you think is the top). It's above the letter A.

A system app that detects when one is driving a car, and automatically disables texting.

And is able to detect whether you're the driver, or just the passenger, or just on a bus, train, or ricksha, or whether you've just passed the phone over to the person riding shotgun?

Your system app exists. It is called "Owner", but unfortunately, it's only available to the Not Stupid, which severely limits distribution.

Every other time = default settings

And give me a button to quickly toggle between them.

As well as a button to quickly toggle between 2G and 3G
It would be cool to sync that with the calender app so it would change profiles automatically based on the info you provide (if that's what you wanted it to do).

I hope 3.1 can control my toaster while I am in class. That way I can have my toast warm by the time I get home. But I also hope it will disable my iPhone while I drive home so that my toast will burn. Burnt toast is the best.

*I do not own an iPhone.

Absolutely top of my wishlist is a much improved notification system - I'm guessing it won't come until iPhone OS 4 though.

The current modal notification system already seems dated and does not scale well. Third-party notifications are going to make this even more of an issue.

Perhaps we need something like Growl for the iPhone (but from Apple, obviously) - an API that can provide both live updates while the phone is in use, and feed a Notification GUI on the lock screen as kman suggests.

This could be as simple as a custom dock or app screen, with the most recently-notified app icons showing their notification badges.

Even just being able to see the four basics at a glance - unread emails, missed calls, new voicemails and new messages - would be a major bonus.
