After upgrading from 8.5.1 to 9.2.1 and doing a clean install, I can only get 256 colors at 1280x1024 res. Before I got thousands, did I lose an extension or something?

Sounds like it. You'll need to provide some more information. What computer and if you have a third party video card would be helpful.

It's a Beige G3 with a Sonnett G4 chip in it and an ATI Rage video card

I took a quick peek at Sonnet's support page, and they recommend installing system software with the original processor. My guess is that the Mac OS Installer got a bit mixed up with the processor upgrade and didn't install the required drivers (extensions) for your video card. To get them manually, you could use a utility like TomeViewer to manually extract the drivers from the Installer files, or Apple might have something on their download page.
