Are there any sites that deal with
Macs and mobile phone compatibility.

What kind of Phone you got?
The Sony Ericssons work the best with Macs.

It's not really the phone but my Macs - which are all
2-3 years old now and don't have USB2 or Bluetooth.

You should just buy a cheap USB bluetooth dongle. They'd only be about $30 or so now, surely.

I got my Bluetooth dongle for $25 at Walmart. Works like a charm.

I've used my past few phones with my mac.
SE T610i - worked very well over bluetooth, especially with salling clicker.
SE K700i - Again, great for syncing, not as good with salling clicker, has a remote built in though
my new phone arriving tomorrow is the SE K750i, my g/f has it and after a patch it works great with my iBook over bluetooth, and I have a script for iTunes to sync music to its memory stick.
Get a bluetooth dongle and a SE phone. Enjoy.

Generally yeah you can, unless it's operator locked.
