Here are two complete solutions:
1. Apple Events
This is the Applescript you want:

tell application "Finder" of machine "eppc://username:[email protected]" to open ":Applications:iTunes"
It may prompt you for the password anyway, but if you save it to your Keychain you should be fine.
2. SSH
This looks more complicated but can be much more powerful down the road.
1. On Powermac, open Terminal and type
ssh-keygen -t dsa
Follow the prompts, and press 'return' twice to use an empty password.
2. Do the same thing on the iBook.
3. On the iBook, type
scp .ssh/id_dsa.pub [email protected]:~/.ssh/authorized_keys2
This allows secure, passwordless communication from the iBook to the Powermac.
Now, you can type in Terminal
ssh [email protected] 'open -a iTunes'
or if you prefer, make an Applescript:
