I made the mistake of trying to archive a folder on my server over Airport. After waiting 5 minutes for it to work, I clicked Cancel. It's been 12 minutes now . . .

That works, I was just hoping the button labeled Cancel would actually do something . . .
Don't get me wrong, this is still an improvement over OS 9, where I would have had to reboot the computer with a lengthy disk check, but still . . . just stop!

I've always been a proponent(sp?) of a new modifier key to the right of the space bar labeled GD... the God Damnit Modifier.
Usage would be, in your case for example, hold down God Damnit and click cancel and the operation would be forced (as opposed to ignored, i guess).
