I need to add a main drive to replax the 60GB Maxtor my G4/733 came with.

I see the Maxtor 7200 drive with 160GB at around $100 with rebates - but can I used them as my main drive?

I've already got two drives for video editing that are using an ATA 100 controller.

Please tell me what you think?

You can use it, but it will only see 127GB of it. The controller in the 733 is ATA-66mhz.
